"Some people have contacted me asking for the pancake recipe. So, here it is! It's the Magnolia recipe from Austin's Magnolia cafe- gingerbread pancakes, only I substitute half the flour for rolled oats. Yum!! LL"

This recipe is from Austin's Magnolia Cafe. At any hour of the day or night, you are likely to find a crowd at the Magnolia -- a well-fed crowd.

Ingredients:
3 eggs
1/4 cup firmly packed brown sugar
1/2 cup buttermilk
1/2 cup water
1/4 cup brewed coffee
2-1/2 cups all-purpose flour (Lisa substitutes half the flour for rolled oats)
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
4 tablespoons butter, melted

Directions:
Cream together the eggs and brown sugar. Add the buttermilk, water and coffee, and stir until smooth. Set aside.
In a separate container, sift together the flour, baking powder, baking soda, cloves, cinnamon, ginger and nutmeg.

Combine the egg mixture with the flour mixture, and stir in the melted butter. Makes about 3-1/2 cups of batter, or enough for 8 to 10 pancakes.
